Sauteing the onion and grated carrot first adds sweetness and moisture, and a milk-soaked panko panade keeps the lean meat tender. Baking the loaf freeform on a sheet pan gives you more caramelized glaze on every side. Leftovers make some of the best sandwiches of the week.
