Creamy Tuscan chicken is a modern weeknight favorite, and it earns its spot with bold flavor from just one skillet. Sun-dried tomatoes packed in oil bring a sweet, tangy depth, and a little of their oil adds even more flavor to the sauce. Parmesan melts into the cream for a rich, savory finish, while a big handful of spinach wilts right in. Serve it with crusty bread, rice or roasted potatoes to soak up the sauce.

Instructions

  1. Pat the cutlets dry and season both sides with the salt, pepper and Italian herbs.

  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 4 minutes per side until golden brown, then transfer to a plate; it will finish cooking in the sauce.

  3. Reduce the heat to medium and add the butter to the skillet. Once melted, add the garlic and cook for 30 seconds until fragrant.

  4. Add the sun-dried tomatoes and red pepper flakes and cook for 1 minute, stirring.

  5. Pour in the broth and scrape up the browned bits. Simmer for 2 minutes until reduced slightly.

  6. Stir in the cream and bring to a gentle simmer for 3 minutes.

  7. Reduce the heat to low and whisk in the Parmesan until melted and smooth.

  8. Add the spinach by handfuls and stir until wilted, 1 to 2 minutes.

  9. Return the chicken and any juices to the skillet, spoon the sauce over and simmer gently for 4 to 5 minutes until the chicken registers 165 degrees F.

  10. Taste and adjust the seasoning, scatter the basil over the top and serve.

  • Keep the heat low once the Parmesan goes in; boiling a cheese sauce hard can make it grainy.
  • Leftovers keep 3 days refrigerated; reheat gently with a splash of broth or milk to loosen the sauce.
  • Use half-and-half for a lighter sauce, simmering it a few extra minutes, or swap the spinach for chopped kale added with the cream.
