Sweet tea is a Southern institution, and a fresh peach syrup makes it taste like a summer afternoon on the porch. Simmering the peaches with their skins on gives the syrup a gorgeous blush color and plenty of fruity flavor. A tiny pinch of baking soda is an old Southern trick that softens the tannins, so the tea stays smooth and never bitter. Letting it cool before refrigerating helps keep it crystal clear.

Instructions

  1. Pit and roughly chop 2 of the peaches, leaving the skins on for color.
