This thick, milkshake-like smoothie is the one that actually keeps our test kitchen full until lunch. Soaking the oats first is the step most recipes skip, and it is the difference between a silky drink and a gritty one. Frozen banana adds natural sweetness and body, peanut butter and Greek yogurt bring protein, and flaxseed adds fiber. A pinch of salt makes the peanut flavor taste deeper - trust us on that one.

Instructions

  1. Slice the bananas into coins and freeze them in a single layer on a parchment-lined plate for at least 2 hours, or use bananas you have already frozen.

  2. Combine the oats with 1/2 cup of the milk in a small bowl and let soak for 10 minutes, or cover and refrigerate overnight.

  3. Warm 1 tbsp of the peanut butter in the microwave for about 10 seconds, until loose and drizzly.

  4. Drizzle the warm peanut butter in thin lines down the inside walls of two glasses and place the glasses in the freezer to set the drizzle.

  5. Pour the soaked oats with their milk and the remaining 1 cup milk into a blender, then add the Greek yogurt, remaining 2 tbsp peanut butter, maple syrup, flaxseed, cinnamon, vanilla and salt.

  6. Add the frozen banana and ice cubes on top.

  7. Blend on low for 20 seconds, then on high for about 60 seconds, until silky with no visible flecks of oats.

  8. Stop and taste. Add more maple syrup for sweetness or a tiny pinch more salt to boost the peanut flavor, and add a splash of milk if it is too thick to pour.

  9. Pour into the prepared glasses, dust with a pinch of cinnamon and serve right away, since the oats continue to thicken the smoothie as it sits.

Test kitchen tips

  • Blend in 1 tbsp unsweetened cocoa powder for a chocolate peanut butter version that still has no added sugar beyond the maple.
  • Refrigerate the overnight oat soak in a jar so breakfast takes just two minutes; the smoothie itself is best blended fresh.
  • Almond butter or sunflower seed butter both work in place of peanut butter for a different flavor or a nut-free option.
