The Denver omelet, also called the Western, is a diner menu staple for good reason: smoky ham, sweet peppers and onion make every bite savory and satisfying. We saute the filling first so the vegetables are tender and the ham is lightly browned. Stirring the eggs for the first few seconds makes small, soft curds, and then we let the omelet set before folding. Each one takes about 2 minutes, so breakfast for two is quick.
Instructions
Melt 1/2 tablespoon butter in an 8- to 10-inch nonstick skillet over medium heat. Add the onion and both bell peppers and cook for 3 to 4 minutes, until softened.
