Brioche French Toast
Thick slices of buttery brioche soaked in vanilla-cinnamon custard and griddled until golden outside and creamy within.

Rich brioche makes the most luxurious French toast, especially when it is a day or two old and ready to soak up custard without falling apart. Our custard uses a splash of heavy cream for a custardy center and a whisper of cinnamon and nutmeg for warmth. Medium-low heat is the key, giving the outside time to caramelize while the middle cooks through. Finish with powdered sugar, berries and warm syrup.
Instructions
Heat the oven to 200 degrees F and set a wire rack on a sheet pan inside to keep the finished toast warm.
If your brioche is fresh, lay the slices on a rack and let them dry for 1 hour, or bake them at 300 degrees F for 8 minutes, so they hold up during soaking.
In a wide shallow dish, whisk the eggs, sugar, cinnamon, nutmeg and salt until no streaks of egg white remain.
Whisk in the milk, cream and vanilla until smooth.
Melt 1 tablespoon butter on a griddle or large nonstick skillet over medium-low heat until it foams.
Dip 2 slices of brioche into the custard for 20 to 30 seconds per side, until saturated but not falling apart, and let the excess drip off.
Place the slices on the griddle and cook for 3 to 4 minutes per side, until deep golden brown and the centers spring back when pressed.
Transfer the toast to the rack in the oven.
Wipe the pan if any bits have burned, add more butter and repeat with the remaining slices, soaking only right before cooking.
Serve dusted with powdered sugar, topped with berries and drizzled with maple syrup.
Test kitchen tips
- Challah is an excellent substitute for brioche and gives a slightly chewier bite.
- Freeze cooked, cooled slices between sheets of parchment for up to 2 months and reheat in a 350 degree F oven for 10 minutes.
- For a dairy-free version, use full-fat coconut milk in place of the milk and cream and cook in coconut oil.
