General Tso's is the takeout favorite everyone orders, and this tofu version might be even better than the original. Tearing pressed tofu into rough pieces creates craggy edges that fry up extra crunchy and grab onto the sauce. The sauce balances soy, rice vinegar, hoisin and brown sugar, with a subtle heat from whole dried chiles. Toss it together at the very last second and serve immediately while the coating is still crackling.
Instructions
Pat the pressed tofu dry and tear it into rough 1-inch pieces with your fingers.
