French Onion Soup
Deeply caramelized onions simmered in rich beef stock with thyme and wine, crowned with toasted baguette and bubbling Gruyere.
- Deeply caramelized onions
- Bubbling cheesy crown
- Bistro classic at home
French onion soup proves that patience is the most important ingredient in the kitchen. Three pounds of onions cook down slowly for over an hour until they turn jammy and deep brown, and that is where all the flavor comes from. A splash of wine and brandy, good beef stock and fresh thyme turn them into a savory, sweet broth. The broiled cheese toast on top makes it a meal.
Instructions
Melt the butter with the olive oil in a large heavy Dutch oven over medium heat. Add the onions and 1 teaspoon salt and stir to coat; the pot will be very full, but the onions shrink dramatically.
