Brazilian Cheese Bread (Pao de Queijo)

Pao de queijo comes from the state of Minas Gerais, where these chewy cheese rolls are eaten at breakfast, with afternoon coffee and pretty much any time in between. Tapioca flour is the secret: scalded with hot milk and oil, it turns stretchy and gives the rolls their hollow, bouncy middle and thin crackly shell. We use a mix of Parmesan for sharpness and mozzarella for pull. The dough freezes perfectly, so you can bake just a few whenever the craving hits.
Instructions
Heat the oven to 400 degrees F and line a baking sheet with parchment paper.
