Pozole rojo is the celebration stew of Mexico, served for birthdays, holidays and any night that calls for a big pot on the stove. Pork shoulder simmers low until meltingly tender, then a smooth puree of toasted dried chiles turns the broth a deep, earthy red. Hominy adds its chewy, corn-sweet bite. The garnishes are half the fun, so set out shredded cabbage, radishes, lime and oregano and let everyone build their own bowl.

Instructions

  1. Combine the pork, water, onion halves, 4 garlic cloves, bay leaves and 2 teaspoons of the salt in a large heavy pot. Bring to a boil over high heat and skim off the foam for about 5 minutes.
