Mujadara is a centuries-old Levantine dish of lentils and rice that proves humble ingredients can taste extraordinary. Nearly all of its flavor comes from a big pile of onions cooked slowly in olive oil until they are mahogany brown and crisp at the edges. Half the onions and some of their flavorful oil go into the pot with the rice, and the rest are scattered on top for crunch. A garlicky cucumber yogurt on the side makes it a complete and deeply satisfying meal.
Instructions
Combine the lentils and 4 cups of the water in a saucepan and bring to a boil. Simmer for 15 to 18 minutes, until just tender but still holding their shape, then drain.
