A great rice pilaf is all about separate, fluffy grains, and it takes only a few simple steps to get there. Rinsing the rice washes away excess starch, and toasting it in butter before adding broth gives each grain a nutty flavor and helps it stay distinct. Lemon zest cooks right into the rice while fresh juice and herbs go in at the end for brightness. It is our go-to side for grilled fish, roast chicken and just about everything in between.
Instructions
Place the rice in a fine-mesh sieve and rinse under cold running water, stirring with your fingers, until the water runs clear. Drain for 5 minutes.
