Okonomiyaki roughly translates to grilled how you like it, and it is Osaka's beloved answer to a clean-out-the-fridge dinner. The batter is mostly shredded cabbage held together with eggs and a little flour, so it cooks up tender and sweet inside with a crisp golden crust. We make a quick sauce from ketchup, soy and honey that tastes remarkably close to the bottled kind. Cover the pan while it cooks so the thick pancake steams through without burning.
Instructions
In a large bowl, whisk the flour, baking powder and salt. Gradually whisk in the cold dashi until smooth, then let the batter rest for 10 minutes.
