A covered grill gets hotter than most home ovens, which makes it perfect for pizza with a smoky, blistered crust. The trick is to grill one side of the dough first, flip it and add toppings to the cooked side, then finish over gentler heat so the cheese melts before the bottom burns. We keep toppings minimal because they only have a few minutes to warm through. Fresh mozzarella, a simple garlicky tomato sauce and lots of basil let the char shine.
Instructions
Let the dough sit covered at room temperature for 1 hour, then divide it into 2 equal pieces.
