Arepas are Venezuela's daily bread, crisp on the outside and steamy-soft inside, and reina pepiada is the most famous way to fill them. The name honors a 1950s beauty queen, and the filling is just as glamorous: shredded chicken folded into a lime-bright avocado and mayonnaise mash. We brown the arepas on a griddle and finish them in the oven so they cook through without burning. Miami's many Venezuelan cafes serve them for breakfast, lunch and late-night snacks.
Instructions
