Fresh pineapple turns this retro favorite into something special, with bright acidity and deep caramel edges that canned rings can not quite match. Baking in a cast-iron skillet gives the brown sugar topping even heat so it bubbles into a true caramel. A splash of pineapple juice in the batter keeps the crumb moist and ties the flavors together. The dramatic flip is easier than it looks - just wait exactly 10 minutes.

Instructions

  1. Heat the oven to 350 degrees F. Melt 4 tbsp butter in a 10-inch cast-iron skillet over medium-low heat, then sprinkle the brown sugar evenly over it and cook for 1 to 2 minutes, until the sugar is moistened. Remove from the heat.
