When you start with beautiful sushi-grade tuna, the best thing you can do is almost nothing. A quick coat of sesame seeds gives the steaks a nutty, crunchy crust, and a sear of less than a minute per side leaves a jewel-like ruby center. The dipping sauce is a quick ponzu-style blend of soy, rice vinegar, lime and ginger. It is our go-to when it is too hot to cook but we still want something that feels a little fancy.

Instructions

  1. Make the dipping sauce: whisk together the soy sauce, rice vinegar, lime juice, honey, ginger and wasabi, if using. Stir in half the scallion and set aside.
