Seared Scallops with Sweet Corn and Bacon
Golden, caramelized sea scallops on a buttery sweet corn and bacon saute with blistered cherry tomatoes and chives.
- Ready in 35 minutes
- Restaurant-style golden sear
- Peak-summer corn flavor
Scallops are the fastest route to a restaurant-worthy dinner at home, and summer corn is their best friend. We render bacon first, then use a little of that smoky fat to saute the corn so every kernel tastes seasoned. The real secret is dry-packed scallops and a screaming hot pan, which together give you a deep mahogany crust in under two minutes per side. Our test kitchen likes this with a crisp white wine and a breeze off the water.
Instructions
Pat the scallops very dry with paper towels and set them on a towel-lined plate in the refrigerator while you make the corn. Dry surfaces are what give you a proper sear.
