A fast sear renders the fat cap and builds flavor before a coating of Dijon mustard glues on a crunchy crust of panko, fresh herbs, lemon zest and Parmesan. The oven finishes the job in about 20 minutes. Slice it into elegant chops right at the table.

Instructions

  1. Pat the lamb dry and season all over with the salt and pepper. Let it stand at room temperature for 30 minutes.
