Horiatiki, the Greek village salad, contains no lettuce and needs no complicated dressing, just ripe summer vegetables and excellent olive oil. The juices from salted tomatoes mingle with the oil and vinegar at the bottom of the bowl, and that is the best part to mop up with bread. We keep the feta in one thick slab on top, the way it is served in Greek tavernas, so everyone can break off their own creamy chunk. Make it when tomatoes are at their peak.
Instructions
Place the sliced red onion in a small bowl of ice water and let soak for 10 minutes to mellow its bite, then drain and pat dry.
