A Dutch baby is the easiest way to wow a brunch table: blend a simple batter, pour it into a sizzling buttered skillet and watch it climb the sides of the pan in the oven. The secret is a thoroughly preheated cast iron skillet and room-temperature eggs and milk, which give the tallest rise. It deflates quickly once out of the oven, so bring it to the table right away. Fresh lemon juice and powdered sugar are all it needs.

Instructions

  1. Place a 10-inch cast iron skillet on the middle rack and heat the oven to 425 degrees F; let the skillet heat for at least 15 minutes once the oven reaches temperature.
