The secret is patience with the onions: cooking them until deep golden builds a sweet, savory base that canned chickpeas soak right up. We mash a few chickpeas into the sauce to thicken it naturally, no cream needed. Serve it with basmati rice or warm flatbread and a squeeze of lemon.
Instructions
Heat the oil in a large skillet or Dutch oven over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds, until fragrant and a shade darker.
